Tonight we had Chicken penne with asparagus and banana bread. It was delicious and easy to make. We scarfed it down before I could catch a picture (what can we say, we're hungry people!).
Chicken Penne Pasta with Asparagus
16 ounces penne pasta
2 tbsp olive oil
2 boneless/skinless chicken breast cut into bite size pieces
12 ounces asparagus cut into bite size pieces
4 minced cloves garlic
1 tsp red pepper flakes
pinch flax seed
shredded Parmesan cheese
1. Cook Pasta for about 8 minutes in boiling water, drain and place in bowl
2. Saute chicken in 1 tbsp olive oil until brown. Remove from pan. Add 1 tbsp olive oil, garlic, asparagus, red pepper flakes and cook until asparagus is tender. Add chicken, cook for two minutes to combine flavor. Sprinkle flax seed over meal.
3. Salt and pepper to taste. Toss pasta and chicken/asparagus mix together.
VOILA! Tasty, healthy and easy to make meal!
Banana Bread
Banana Bread
1/2 cup butter, melted
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1.5 teaspoon baking soda
1/2 teaspoon salt
1/2 cup applesauce
1/2 cup chopped walnuts (optional)
2 medium bananas, sliced
1/2 tsp milled flax
1. Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.
2. In a large bowl, stir together the melted butter and sugar. Add
the eggs and vanilla, mix well. Combine the flour, baking soda milled flax and salt,
stir into the butter mixture until smooth. Finally, fold in the applesauce, walnuts (optional) and bananas. Spread evenly into the pan.
3. Bake at 350 degrees F for 50 minutes, or until a
toothpick inserted into the center of the loaf comes out clean. Cool
loaf in the pan for 10 minutes then remove from pan and cool on a wire rack.
HINT: The best type of banana for banana bread is one that has equal parts of yellow and black on the peel! Toss in the freezer for a bit to harden so it may be easier to work with!
